Vet Report, Completing Our Solar Setup, More Toilet Woes

Merry Christmas, everyone!! We hope this holiday finds you happy and healthy, wherever you may be!

Our very first RV Christmas has been spent parked in a mobile home park in Glendale, Arizona. Not the most scenic surroundings, but being here has made it possible for us to take care of some important issues before we head back into the desert for more off-grid living.

First of all, both the kitties got to visit the vet last Friday morning. If you remember from our last post, Maggie had vomited on our last drive and it looked like she had a case of worms. Molly had been having some constipation problems as well as a runny nose, so we took them both to the same vet that we used for our old cat, Macho, when we lived here in Glendale–Dr. Charles Toben at Apollo Animal Hospital. I was able to get a stool sample from Maggie, but of course Molly didn’t cooperate that morning.

Maggie Mae is 10-1/2 years old. She weighed in at 14 pounds, 10 ounces, which is about a pound more than she weighed in August at her last checkup. The vet checked her eyes and said she’s starting to develop a little cloudiness due to age, but it’s not serious yet. He found some acne under her chin (I didn’t know cats got acne), so he shaved her chin so we could treat it with hydrogen peroxide.

Her stool sample came back negative for parasites, but he said that from what we described from her puke, it sounded like the type of worms that are caused from fleas, and that they are cyclical or sporadic,so he gave us worming medication to treat both of them. They don’t currently have fleas, but they had a problem with them when were were in Texas in September, and the vet said these parasites are likely a result of those fleas. He gave them their first dose of meds in the office, and we have to give them a second dose on Friday.

Molly Ann is 8-1/2 years old. She weighed in at 11 pounds, 14 ounces, which means she’s lost over a pound since August. The vet listened to her breathing and said he didn’t hear any problems with her lungs, so her runny nose is most likely seasonal allergies (she’s had this issue for a couple of years). In regards to the constipation issue, we discussed their diet and he recommended adding some canned pumpkin or squash to their wet food in the morning–something else I had never heard of.

Other than those issues, he said they both appear to be healthy. He’s such a great veterinarian, I think he spent almost an hour with us, making sure we had all our questions answered. He provided us with electronic copies of the records, and told us to feel free to call from anywhere on the road if we needed help with the girls.

I’ve started adding a little pumpkin to their morning wet food. So far they are tolerating it, but they definitely know something is a little “off” taste-wise with their breakfast, so they don’t gobble it down like they usually do. I’m still waiting to see if it has the desired outcome (no pun intended!).

After returning the kitties to the rig, we had lunch and then drove to the East Valley to pick up a shipment of solar cables from my friend’s house where they had been shipped. Afterward we drove north to Scottsdale to look for some additional pieces at RV Solar Electric, a place we found via a Google search. Unfortunately that place turned out to only be an office for online sales and not a retail store, so that was a busted trip.

On Saturday we did a little more research and found a solar retailer in Mesa. This time we called ahead to confirm that they had what we needed, and then we made the 45 minute drive back to the East Valley. The store is called Solar Penny, and they were able to take care of everything that we needed. We bought a charge controller so we can charge our house batteries with our new solar panels. We also got the additional cables that we needed to go to the batteries, and the owner even attached the proper connectors so Andy wouldn’t have to do that. We were very pleased with our visit to their shop, and would definitely recommend them to anyone looking for parts or advice for their solar setup.

While we were in the Mesa area we looked for good plant-based options for lunch and found a little gem called Seed Shack in Gilbert. It’s a vegan American-Oriental fusion cafe, and their food is all prepared in-house from scratch. Check out their menu online if you’re in the area and want good healthy food!

On Saturday night we went to downtown Glendale to see the Christmas lights at their annual Glendale Glitters event which lasts for about six weeks during the holidays. We had a delicious sweet corn tamale from the sidewalk stand in front of Bitzee Mama’s (one of our old favorite Mexican restaurants), and followed it up with some vegan rolled ice cream at Nomadic Rolled Ice Cream. The vanilla ice cream was soy-based, and we chose strawberries and oreo cookies as our mix-ins. It was delicious!

On Sunday we took care of the laundry, and then we went to the VeganFest in Peoria’s Centennial Park. They had about 12-15 food trucks there, all serving vegan food. There were also booths set up for vendors selling things like homemade soap, essential oils, t-shirts, etc. They had a line-up of speakers and demonstrations on vegan topics that appeared to be well-attended and received. Andy had a good falafel pita with fries. I tried the vegan “shrimp” po-boy with cajun chips, and it wasn’t good at all, but it had nothing to do with the “shrimp”–the homemade chips were soggy, and there were very few “shrimp” on a huge roll, so it was mostly bread. Anyway, they get points for trying.

After leaving the VeganFest, we decided to drive around a little bit to see how things had changed. We first went up to the Arrowhead Mall area, which was crazy because who intentionally and unnecessarily drives into mall traffic on the weekend before Christmas?? Next we drove down the 101 to Westgate in Glendale to see where the new casino is being built (they allow overnight RV parking there so we wanted to scope it out). While in that area we went to Cabela’s where we each picked out our Christmas present from each other–I got a new pair of hiking shoes and Andy got a rain jacket that he’s been looking for. Yes, Christmas is a little different this year, as there’s no way to secretly shop for each other and hide gifts until Christmas Eve. Besides, we’re trying to minimize our possessions, so our Christmas gifts to each other are good quality, practical items.

So, we thought we were just about done with all our spending here in the Phoenix area, and were planning to pull out of here on Wednesday, the day after Christmas. But of course, plans are made to be changed. A few days ago we started noticing that when we flushed the toilet, the water wouldn’t shut off when you released the foot pedal. We would have to really jiggle and bang on it to stop the water flow before it totally filled up the bowl and overflowed. So yesterday, Andy checked on parts numbers and called Camping World, knowing that since it was Christmas Eve, they would be closing early. We got to them just in the nick of time and after talking to the parts tech, wound up buying a complete new toilet since the foot pedal mechanism cannot be replaced separately.

Since we now have another to-do item on our list, we elected to extend our stay here in the mobile home park by another day. Fortunately they were able to accommodate us, and we were still eligible for one more night at the discounted rate from Passport America. This actually worked out for the best because we still have not received our latest mail shipment from our forwarding service in Livingston, Texas. Hopefully our mail will arrive on Wednesday.

So, here it is, Christmas Day, and we’re going to enjoy being together on the road. Last night we did our traditional snack spread while we watched “National Lampoon’s Christmas Vacation” for the 1,738th time, followed by “Springsteen on Broadway” on Netflix. Today we’re having cinnamon rolls for breakfast, and then I’m going to make my famous vegan pot roast–well, it’s famous in our house anyway. We’re going to visit the gravesites of Andy’s parents and leave some Christmas flowers there, and then hopefully drive by his old neighborhood to check it out.

Tomorrow will be last minute chores, including installing the new toilet, as we prepare to hit the road again.

Where are we going next? We’re still not 100% sure, but we’re leaning toward Yuma where it will be warmer. There’s a cold front moving in over the next few days. We are looking at staying mostly in a BLM Long Term Visitors Area (LTVA) for the winter, but we’re closely monitoring the situation with the government shutdown. From what we understand, the water was to be shut off and services suspended at the LTVA’s in the event of a shutdown, even though you can still camp there. The trash won’t be collected and bathrooms won’t be cleaned or restocked. The office won’t be manned, so there won’t be anyone there to collect camping fees. Weird situation for sure!

So that’s where we are now! I do miss my family so much this Christmas–I’m sending my love to my parents, all my brothers, sisters-in-law, nieces and nephews and their spouses, and great-nieces and nephews, including two new ones that are due to arrive in the next month. Merry Christmas, y’all!! And Merry Christmas to Andy’s brother and sister-in-law in Indiana, as well as his nephew and nieces and their families–hope you all have a joyous Christmas and New Year!!

Turning 60 in Albuquerque and Santa Fe NM

When we first began talking seriously about becoming full-time RVers, I set a couple of personal goals. I wanted to be on the road full-time by the time I reached 60, and I wanted to spend my 60th birthday in Santa Fe, New Mexico.

Both of those goals were accomplished as of Wednesday!

We left the Leasburg Dam State Park on Tuesday morning around 10:30 after stopping to dump the tanks. We drove north on I-25 toward Albuquerque, stopping for lunch at a rest stop near Fort Craig. The rest stop itself wasn’t much to look at, but it just happened to be near a historic site on the El Camino Real trail (for my friends in Mississippi, the El Camino Real is similar to the old historic Natchez Trace). There was a huge metal and glass sculpture standing on a small hill out in the desert, so in spite of the cold wind, I just had to hike out to see it.

The sculpture is made of metal and turquoise-colored glass. Based on its orientation, I would assume that both the sunrise and the sunset would shine through the glass, giving it a beautiful glow. Unfortunately we were there in the middle of an overcast day, so I have no way of verifying that.

We arrived at our destination, Enchanted Trails RV Park and Trading Post in Albuquerque, just after 4:00 PM. It was cold, overcast and windy, and the site wasn’t exactly level, but we got set up as quickly as possible and hunkered down inside the RV.  We turned on our little electric space heater (why run our propane furnace when we’re already paying for electricity, right?), and we were able to stay toasty warm.

On Wednesday, I hit the big 6-0, and we made a day-trip to Santa Fe to celebrate. Our birthday celebrations tend to be pretty low-key by most standards–I was just happy to get to view the beautiful scenery on the hour-long drive north.

Our first stop in Santa Fe was lunch at a vegetarian restaurant that I found on the Happy Cow app. It’s called Annapurna’s World Vegetarian Cafe, and it specializes in South Indian vegetarian and vegan dishes, along with vegan desserts. It’s located in a little strip center and doesn’t look like much from the outside, but this place was packed for lunch.

The inside of the cafe was very colorful and comfortable, as well as being a great place for people-watching. Their clientele is very diverse and obviously very loyal, so we saw some interesting characters while we dined there.

I had a sampler platter of Indian dishes for lunch that was very tasty. Andy had the Mediterranean platter that included hummus and falafel, and declared it was some of the best he had ever tasted. For dessert, we split a slice of their homemade vegan coconut pie–this was not a cream pie, it was pure coconut and was delicious!

After lunch we drove into Old Town Santa Fe to do a little exploring and sight-seeing. Of course we visited the Palace of Governors where the Native Americans sell their jewelry on the sidewalk. Our first visit here was about 20 years ago when Andy was just getting started with his silversmithing hobby, and it was one of the sources of his inspiration. Now 20 years later, he was able to discuss techniques and materials with the artists as we admired their handiwork.

We walked around downtown a little longer, visiting the Cathedral Basilica of St. Francis of Assisi and more of the little shops. NOTE #1: Living in a small RV helps remove the temptation to spend money on needless “stuff” because there’s nowhere to put it!

For our final stop, we went to Starbucks so I could get my free birthday drink, and also  so that we could use their wi-fi to run back-ups on our iPhones and download updates to some of the software on my laptop. Well, that didn’t work out so well. We used the Starbucks app to find the nearest location, but when we arrived there we found that it only had outdoor seating. Nice concept, but it was very cool and windy, so we decided to try another location.

We got to the second location which was right back downtown where we had started from. When we went to the counter to order, we were told that they don’t honor the Starbucks rewards because they aren’t a regular licensed Starbucks, but are more like the Starbucks in the Barnes and Nobles stores. We went ahead and ordered anyway, but I missed out on my free drink. And their wi-fi was pitifully slow, so we were there for a couple of hours before all my downloads finished. NOTE #2: Living on the road makes you really appreciate high-speed internet, if you can find it.

But I really enjoyed my day in Santa Fe, especially getting to chat with Mom and Dad by phone while at Starbucks.

Yesterday (Thursday) was busy also, but it was mostly errands and chores. After a late breakfast, we did three loads of laundry here at the RV park. While the clothes were tumbling, I enjoyed checking out the vintage trailers and Hudson automobiles that they have on-site here at the RV Park. These trailers are actually available for rent here at the park, and are so cute.

After lunch we drove in to Albuquerque, and first visited the post office to pick up our first packet of forwarded mail from our Escapees mail service in Livingston, Texas. It was mostly junk mail, but it did include our absentee ballots for the upcoming election, so we’ll be voting in the next couple of days. NOTE #3: It’s easy to get your mail on the road if you have a good mail forwarding service.

After picking up our mail we went to Walmart for grocery shopping, and then to Costco for a few other things, primarily the cats’ dry food. Our last stop was at Camping World to get an extra set of leveling blocks and a couple of maintenance items for Lizzy.  After returning to the rig and putting the groceries away, Andy whipped up one of his huge chopped salads to last us for the next few days. We ate leftovers for dinner and then I turned in about 7:30–I was so tired! NOTE #4–You do tend to get tired more easily at higher altitudes when you’re used to living near sea level.

So today, we’ll be leaving Albuquerque and heading back south. Our destination today is Percha Dam State Park where we have reservations for two nights. I doubt we’ll stay there any longer than that, as we’re leaning toward trying to get into one of the other state parks in the area that have nicer facilities, where we can hopefully snag a first-come, first-served spot near the water. We’ll see how that goes.

Life is good, we’re happy and healthy, and we’re loving New Mexico.

Foil Packet Vegan Cooking for RVing and Camping

One of our favorite methods of cooking while camping or RVing is using foil packets.

On our last trip I put together packets with red potatoes; yellow onion; red, yellow and green bell peppers; Tofurkey meat-free Italian sausage; and Mrs. Dash salt-free Southwest Chipotle seasoning. These were wrapped in heavy duty Reynolds aluminum foil that is specially made for the grill–it has a non-stick side that helps keep everything from getting messy. Then the packets just go on the grill for awhile–the cooking time depends on the quantity of food in your packets, the temperature of your coals, etc. It’s not rocket science, you can always unwrap one end and test the veggies with a fork, and throw it back on the grill if it’s not done. Ours usually take 35-45 minutes to cook.

What’s On The Menu

Only 24 hours left now until we take our first trip in our new RV, Lizzy. At lunchtime today, we went to the storage facility and removed her cover for the first time since we parked her there about five weeks ago. Now Andy is taking her out to get her filled up with gas, and is checking all the critical things like fluid levels and tire pressures.

I, on the other hand, am concentrating on the more important issues like, What are we going to eat?!

We learned from our tent camping days that it helps to come up with a menu for the trip and then take only the items needed to prepare those pre-planned meals. Not only does it ensure that you don’t forget critical ingredients, but it also helps avoid over-packing the cupboards and refrigerator with unneeded items, especially junk and snack foods.

Both Andy and I stick to a whole foods, plant-based diet, and we also avoid oils and salt. We both try to avoid refined sugars, and I also try to avoid bread and wheat products as much as possible. While we may occasionally slip up and have a small amount of dairy or eggs (desserts are my devil), we never, ever eat meat.

So our menu for camping will look a little different than what most people expect to see at a campsite, especially on Memorial Day weekend. But it’s the type of food that we enjoy and feel good about eating, and it helps keep us healthy and happy.

Here’s what we’ll be eating this weekend at Camp Lizzy:

Breakfast – We’ll start each day with refrigerator oats. This dish includes oats, chia seeds, raisins (Andy) or Craisins (me), sliced banana, fresh berries, walnuts and almond milk. I’ve already pre-made kits of the dry ingredients in ziplock bags, and each evening I’ll add mix the dry ingredients with the fruit and almond milk in a plastic container, mix it up and then store it in the refrigerator overnight. The next morning, it’s a sweet, filling, healthy treat to start the day, accompanied by a big mug of hot coffee. As a special treat, we’re going to have cinnamon rolls one morning.

Lunch – Lunch each day will be wraps made with hummus, shredded broccoli/carrot mix (pre-shredded from the produce section), cucumber and tomato slices and kalamata olives. We’ll have some salt-free blue corn chips and salsa on the side, and fresh fruit for dessert.

Dinner – Evening meals get more creative and varied:

  • Friday night – Grilled black bean burgers with BBQ sauce, avocado, tomato; vegetarian baked beans; corn on the cob (cooked on the grill)
  • Saturday night – Foil packets containing potatoes, onions, peppers and Tofurkey sausage links (cooked on the grill); green beans
  • Sunday night – Bomb Diggity Black Bean Rice (recipe from “Epic Vegan Instant Pot Cooking” by Derek & Hannah Howlett); broccoli

And yes, on Sunday night, we will be cooking in our Instant Pot, as all up-to-date RV’ers do. We’ve had our IP for a couple of years now, and totally love it!

Since we want to to test out all the appliances on the first trip, we’ll be using the microwave (for steamable bagged veggies), the convection oven (for cinnamon rolls), the propane stove (for heating canned baked beans), and of course the refrigerator/freezer. Woo-hoo, no ice chest!

We usually drink plain water with our meals, but we will have some beer and wine on hand as well.

Snacks will include fresh fruit (grapes, bananas, apples, tangerines), almonds, and possibly a little vegan dark chocolate.

My goal is to make it through this weekend without gaining more than one pound, preferably less. But it is a vacation after all, and we intend to enjoy ourselves, vegan-style.
